Barely a recipe, summer-fresh treats like these Sweet Cherry Ricotta Toasts hold a special place in my heart. Made with seasonal fruit and a side of protein, naturally sweetened and so delightfully flavourful, I will be making some version of them all summer long.

Simply combine your favourite fruit with a spreadable protein like Greek yogurt, ricotta, labneh or nut butter then top with vibrant herbs, a drizzle of honey and any additional toppings you like.

Here’s everything you’ll need to make these Sweet Cherry Ricotta Toasts

  • Seeded bread, toasted (or crostini)
  • Full fat ricotta
  • 6-8 sweet cherries
  • Cacao nibs
  • Honey
  • Fresh thyme

These Sweet Cherry Ricotta Toasts are a lovely little summer bite made with my easy, no-knead Prairie Seed Artisan. Try changing it up with crostini to make a simple, crowd pleasing seasonal appetizer!

Ingredients

  • 2 slices seeded bread, toasted or crostini
  • 2 tablespoons full fat ricotta
  • 6-8 sweet cherries, sliced washed, pitted and stems removed
  • 1 teaspoon cacao nibs
  • 1 teaspoon honey
  • Fresh thyme leaves to garnish

Instructions

  • Wash, pit and slice cherries and set aside.
  • Toast bread and spread with ricotta.
  • Top with cherries, then sprinkle with cacao nibs. Drizzle with honey and finish with fresh thyme. Serve immediately.
