Avocado Hummus with Spinach

Made with simple, wholesome ingredients, this Avocado Hummus with Spinach is packed with loads of leafy greens, avocado and protein-packed chickpeas!

Hummus is an all-time, family favourite kitchen staple. It’s go-to for us for everything from snacking to salads and sandwiches.

The avocado makes it extra creamy and it’s super quick to make. You can have it ready in 20 minutes!

We love this greened up version. Try it on toast or as a dip with crackers or vegetables!

    Avocado Hummus with Spinach

    Makes 8 servings; prep time 20 minutes.

    Ingredients:

    1 avocado, washed, peeled and cored

    1 ½ cups spinach

    1 540 ml/19 oz can chickpeas, drained and rinsed

    1 garlic glove, minced

    Juice from ½ lemon, squeezed (about ¼ cup)

    1/3 cup unfiltered water, plus more to thin as desired

    3 tablespoons extra-virgin olive oil

    2 tablespoons Tahini

    ½ teaspoon ground cumin

    Sea salt and freshly ground pepper to taste

    Optional toppings: more olive oil, chickpeas and/or diced avocado, za’atar, sumac or smoked paprika and fresh thyme.

    Instructions:

    1. Using a 4-cup food processor, blend chickpeas for about 1 minute or until a thick paste is formed.

    2. Add avocado, spinach, tahini, garlic, lemon juice and spices and continue mixing until smooth, scraping down the sides with a spatula as needed. Then add water and olive oil and continue to blend for another 2-3 minutes, adding more water if needed to reach desired consistency.

    3. Transfer to serving bowl and garnish with your toppings of choice. Enjoy! 

    Notes: 

    Storage: Due to the avocado’s oxidation effect, this hummus can be safely stored in an air-tight container in the refrigerator for a slightly shorter period of up to 3 days.
