Tomato Toast

The BEST Tomato Toast. Made with thick, juicy sliced heirloom tomatoes nestled on toasted olive artisan bread that’s been slathered with lashings of mayo.

Two slices heirloom tomato toast, halved.

As an avid gardener, I wait for homegrown tomatoes all year and tomato toast is most definitely a thing. My favourite version is made with lush, flavourful and brightly acidic heirloom tomatoes.

Finished with a generous pour of olive oil, lots of pepper and flaky salt, the result is a simple but nourishing meal that is a richly vibrant celebration of summer.

Heirloom Tomato Toast

 Serves 2

Ingredients: 

1-2 large heirloom tomatoes, sliced

4 slices olive artisan bread, grilled or toasted

2-3 tablespoons mayonnaise

1 tablespoon extra-virgin olive oil

Flaky salt and freshly ground black pepper

Instructions:

  1. Divide the toasts between two small plates. Spread mayo evenly between the toasts. Arrange sliced tomatoes onto each, then drizzle with olive oil and season with flaky salt and lots of pepper.
